15-minute meals for two
Balsamic Chicken Pizza
5 minutes preparation time and 15 minutes cooking time
2 sheets grain wrap bread
2 tsp tomato pesto
2 cups baby spinach
1 large flat mushroom, sliced thinly
1 shallot, sliced thinly
1 chicken breast, cut into small pieces
¼ cup baby bocconcini, sliced
- Heat a medium non-stick frying pan over medium heat and spread the mushroom slices over the pan. Cook the mushroom for 1 minute on side.
- Meanwhile, line a baking tray with baking paper and lay the two pizza bases on it. Spread the tomato pesto over the pizza bases and divide the baby spinach evening over the two.
- Once the mushrooms are cooked, remove from the pan to cool. Keep the pan hot and add the chicken pieces and shallot to the pan. Drizzle the chicken with balsamic vinegar and stir to cook evenly for approximately 3-5 minutes
- Heat a grill on high.
- Spread the cooked mushrooms, chicken and shallots evenly over the pizza bases, top with slices of bocconcini, then place under the hot grill for 5-7 minutes or until the cheese has melted.
- Enjoy warm
