Healthy Breakfast Muffin Recipe
Breakfast can sometimes be the last thing you want to stress about in the morning, but it does provide alot of benefits, so starting your day with a nutritional meal can really assist you. Stay ahead of yourself and give yourself the treat of laying in bed that extra 10 minutes every morning by preparing your weekly breakfast in advance. Healthy Breakfast Muffin
15 minutes preparation time, 20 minutes cooking time
1 ripe banana, mashed
1.5 cup blueberries
½ cup self-raising flour
½ cup wholemeal self-raising flour
¾ cup rolled oats
¼ cup shredded coconut
1 tsp cinnamon
1 tsp chia seeds
¼ cup milk
- Pre-heat oven to 180oC.
- Whisk together ripe banana and egg in a small bowl.
- In a separate, larger bowl, combine flours, oats, coconut, cinnamon, chia seeds and blueberries.
- Add the milk and banana and egg to the dry ingredients and stir until just combined.
- Spoon mixture into a lined muffin tray and bake for 20 minutes or until golden.
