Acai Berry & Chia Jam

Ingredients
1/4 Cup (40g) Chia Seeds

1/2 Cup (125ml) Apple Juice
.
1 Cup (140g) Mixed Berries
.
1 Tbsp Lemon Juice
.
2-3 Tbsp Pure Maple Syrup
.
1 Tbsp Acai & Berry Powder
.
1 Tbsp Beetroot Powder
.

Method
1. Combine chia seeds and apple juice. Soak for 30 minutes or until juice is absorbed and chia seeds have softened.

2. Puree berries in a small food processor. Combine with maple syrup and chia mixture in a small saucepan. Simmer, stirring occasionaly to prevent sticking, for 10 minutes or until thickened.

3. Add lemon juice, acaia + berry powder and beetroot powder.
.
4. Store in an airtight container in the fridge. Will last up to 2 weeks.
