Easy Pan Fried Salmon and Vegetables

5 minutes preparation time and 10-12 minutes cooking time

Serves 2


Ingredients:

Extra virgin olive oil

2 x 150g salmon fillet

1 tsp soy sauce

1 small onion, sliced thinly

6 portobello mushrooms, sliced thinly

1 bunch asparagus, ends trimmed and cut into thirds


Method:

  1. Heat a large frying pan over medium to high heat and drizzle with olive oil
  2. When hot, add the salmon fillets to one side of the pan and drizzle with soy sauce. Cook for 5 minutes on each side.
  3. At the same time add the onions to the other side of the pan and sauté lightly. Add the mushrooms after two minutes and continue to cook.
  4. When it is time to turn the salmon, add the asparagus and continue to cook the vegetables, stirring occasionally.
  5. Add additional sauce if you wish; however the fish is usually flavoursome enough.
  6. Once the fish has finished cooking, let it stand for 2 minutes then serve with the cooked vegetables.



Pesto Chicken and Mushroom Pasta

10 minutes preparation time

15-20 minutes cooking time

Serves 4


Ingredients:

3 cups fresh basil leaves

2 Tb spoon pine nuts

2 Tb spoon garlic infused olive oil

1 Tb spoon parmesan cheese

300g dry spiral pasta

Olive oil to grease pan

1 small onion, sliced thinly

500g chicken breast, sliced thinly

3 cups button mushrooms, sliced thinly

1 broccoli head, cut into small florets


Method

  1. Place basil leaves, pine nuts, garlic infused olive oil and parmesan cheese in a small food processor. Blend on high for 1 minute. Scrape down the sides with a spatula and blend again until desired consistency is achieved.
  2. Bring to boil a large saucepan of water and cook pasta until al dente
  3. Meanwhile, in a large frying pan heat the olive oil, then add the onion and cook for 2-3 minutes. Once aromatic add the chicken and cook for 5 minutes
  4. Add the mushrooms and broccoli to the frying pan and cook for a further 5 minutes.
  5. Once the pasta is cooked, drain the water, though save a small amount. Once the vegetables are cooked add the cooked pasta to the frying pan along with water and pesto sauce.
  6. Serve hot with a sprinkle of parmesan cheese if desired.
