Two Easy Fritter Recipes

We are all at fault of it! It’s been a LONG day at work, you are exhausted by the time you get home and really can’t be bothered to spend time cooking dinner and Uber eats or take-away is just such an appealing option. But if you’re trying to watch what you are eating and aiming for weight loss, unfortunately that option is not going to be helpful and could undo some of the great work you have done earlier in the week.
Next time you feel that way why not try one of these fritter recipes. They are super easy to prepare and fast to cook, don’t need complicated ingredients, and can be pretty low calorie too!
Zucchini and Lentil Fritters
Makes 12+ fritters
Preparation time: 10 minutes, Cooking time: 4-6 minutes per fritter
Ingredients:
500g zucchini, grated (excess water squeezed out)
400g can lentil, drained and rinsed
½ cup grated cheese of your choice
2 shallots, sliced thinly
½ cup self raising flour
2 eggs, lightly beaten
Pepper to taste

Sweet potato and Corn Fritters
Makes: 12+ fritters
Preparation time: 10 minutes, Cooking time: 4-6 minutes per fritter
Ingredients:
500g sweet potato, grated (excess water squeezed out)
300g can corn
75g feta cheese, crumbed
2 shallots, sliced thinly
½ cup self raising flour
2 eggs, lightly beaten
Pepper to taste
Method
- Lightly beat the two eggs on a small bowl, then add the flour and mix well.
- In a separate bowl combine the grated sweet potato, corn, crumbed feta and shallots.
- Add the egg and flour batter to the vegetable mix and stir until just combined. Add pepper if desired.
- Heat a large fry pan on moderate to high heat and lightly grease with extra virgin olive oil. Spoon large portions serves of the mixture in to the frying pan. Cook the fritters for 2-3 minutes of each side or until golden and cooked through.
- Repeat until all mixture is used.
- Serve with alone or with your choice of sides such as smoked salmon or mashed avocado and salad if desired.
